Founded by Ylenia Petrillo and Gigi Lista, the locanda emphasizes locally sourced ingredients and recipes inspired by 19th-century Neapolitan chef Ippolito Cavalcanti. Signature dishes include Scammaro, a pasta prepared without fat and enriched with pine nuts, raisins, olives, and capers, and montanare, a hearty bread-and-tomato treat beloved by Naples’ peasants. Other highlights include fried cod, meatballs in ragù, mozzarella in carrozza, baked anchovies, and eggplant parmigiana.
